As Executive Chef at the Jonathan Club, I had the pleasure of meeting Charles Eugene while I was catering for an Oscar party.  Charles was impressed with my presentation and said he would love to work for me. I hired him even though he had recently graduated from a reputable Culinary University. He has since become a tremendous asset to that organization.
